Pineapples are one of the world’s most interesting fruits. Did you know that they were so rare that they would cost the modern-day equivalent of thousands of dollars back in the day? Rich families used to rent a pineapple for dinner parties! But not to eat, just to display on the table as a sign of wealth! Crazy. Pineapples also contain an enzyme that dissolves protein fibers. If you’ve ever eaten too much uncooked pineapple and have a sore mouth, this is the reason. I love pineapple because it is a really versatile fruit, as you’ll see in my list of 25 pineapple desserts.

1. Pineapple Upside Down Cake

I’m not quite sure why it is called a ‘pineapple upside-down cake’ as it is rare to see a cake with the fruit topping on the bottom! What I am absolutely sure of is that this cake is delicious. There’s a layer of soft sponge topped with pineapple. As it bakes, the pineapples go slightly brown and caramelized and leak their delicious juice down into the sponge, keeping it nice and moist!

Pineapple is considered a tropical fruit. Maybe that is why it works so well with another beachside favorite… The humble coconut. Pina colada on a stick, anyone? I can think of no summer’s day treat more refreshing than this recipe which is super easy to make. The hardest thing about it is waiting for them to freeze! The good news is that with a little effort and time, you can create a dessert that will keep in the freezer for weeks, meaning you can serve them (or treat yourself) whenever you like.

3. Pineapple Cupcakes

By the time I’ve skinned and chopped pineapple, I want my workload to be as low as possible. That’s why I cheat a little and use a pre-made cake mix. I don’t consider it is cheating. You won’t convince me otherwise. What you end up with is light and fluffy cupcakes filled with amazing flavors and little chunks of juicy pineapple. Divine.

Did I mention I like low effort desserts? Well, here I another that relies upon and a few little pre-made cheats. Three ingredients and a mouthful of taste… What could be better than that? The bulk of this dessert is actually instant pudding mix, which I could eat on its own. When you add in a little crushed pineapple and top it with whipped cream, it is heaven in a glass. I double dare you to try and eat two!

5. Pineapple Cheesecake 

Is there a person in the world who doesn’t like cheesecake? When it is as good as this, it’s easy to see why. Starting at the bottom, you’ve got sweet and savory graham crust, then a thick layer of tangy and slightly sweet cream cheese, all topped off with juicy slices of pineapple. Don’t ask me the science behind it, but each flavor complements the next. The best bit is that it requires absolutely zero baking. Make it, leave it to set, job done.

6. Easy Pina Colada Pie

Do you like pina coladas? (That reminds me of a song… I can’t quite remember the name) Do you like pie? Well, how’s about we combine both? This is a little like banoffee pie, but instead of banana, we use pineapple. We make the filling out of rum curd (pineapple and rum, yum!) You can also make a virgin version or use rum essence flavoring to get a similar effect. The entire thing is topped with a thick layer of cream. Heavenly.

7. Pineapple Upside Down Donuts 

Ok, so these are upside-down donuts, and you could always flip them on the plate. Pineapples are the ideal donut topping as they are big, round, and have a hole in the middle, just like donuts! Pineapples are slightly acidic, and when you consider that donuts are cover in sugar, this works really well. Ok, it might need a visit to the dentist if you eat too many, but they taste good enough to make it worth it!

8. Pineapple Bread Pudding 

Bread pudding is traditionally made with raisins. As they cook, they break down slightly and swell, making them super juicy. Well, what works for raisins also works exceptionally well with pineapple. If you are cooking for a large crowd and want to make sure that no one is hungry, this is a great pineapple dessert. You can whip one up in advance, pop it in the oven, and it will take care of itself!

Desserts made with condensed milk are an Indian specialty. The best bit is that it isn’t too heavy. It’s also really easy to knock up in minutes, so if you require a sweet treat after a busy day of working (or cooking), it could be ideal. This dessert is thick, super creamy, and tasty. You can make it even sweeter using agar or palm sugar.

Candying fruit is an age-old way of making it last longer… Not pineapple candy will have a chance as it will be snaffled up in minutes. It isn’t the quickest dessert to make, as it can take a little while for the pineapple to crystalize. But once it does, you’ll have a quick grab-and-go dessert that will keep for weeks or even months. It’s great as you can chop it and add it to cakes and desserts whenever you like.

11. Strawberry Pineapple Kebabs

A desert made on the grill? Yes sir! This is one of the easiest to make and is a great way to finish off the cooking if you’ve had a summer. I love pineapple, and I love strawberries. It’s that simple. Alternate each fruit on a skewer and grill over high heat until the fruit picks up the odd brown char line. Serve with ice cream for a hot/cold contrast that will make your toes curl.

12. Southern Pineapple Casserole 

If you ever went to an event back in the day, you could expect to find cheese and pineapple on a cocktail stick (I’m showing my age there). Well, if it worked then, it will work now. A cheese and pineapple casserole combines chunks of pineapple with cheese and butter. It’s not good for the waistline, but when it tastes this good, do you care?

13. Pina Colada Quick Bread

This super simple bread recipe has elements of coconut and pineapple. It’s light, fluffy, and supremely tasty. The best bit is that it is easy. I hate having to mess around activating the yeast and getting sore hands kneading. Fortunately, this recipe uses its ingredients to the hard work. Baking powder will keep it light as it relies on the acid of the pineapple to activate.

Do you know why pineapple works so well on pizza (allegedly). It’s because the fruit’s surface is full of sugars that cook and caramelize to produce an almost savory edge. It’s no different when you grill pineapple. I love those tasty brown lines and have been known to ‘accidentally cook my pineapple for a little longer than necessary to get this toasted effect. It’s simple, and I love it. And yes it can form part of your dessert, on its own or accompanied with your choosing.

Angel food cake is always a firm favorite when it comes to desserts. You can make it with just one ingredient if you use a pre-made cake mix. All that you need to do in this recipe is add the pineapple. What you are left with is a light and fluffy cake with tiny yellow jewels of juicy pineapple dotted throughout. Give it a go. It’s great for when you are entertaining guests.

16. Punch Bowl Cake 

A punch bowl is normally filled with juicy fruit and gets people in the mood for a party. This cake is no different. It contains everything you’d expect to find in a punch bowl (minus the alcohol)… oh, and I add whipped cream, don’t do that at a party! Did I mention that this is a no-bake cake? Again this is ideal if you are cooking for a crowd. You won’t have to go anywhere near the oven, useful if it is already occupied with what you are making for dinner.

17. Pineapple Oatmeal Cookies

Oatmeal cookies can sometimes be just a little bland. But when you combine them with pineapple, it takes them to a whole new level. When you toast oatmeal, it takes on a real savory note, but it can also go a little dry. The solution is chunks of moist and delicious pineapple. We use a large helping of brown sugar in our cookies. This complements the bite of the pineapple beautifully.

18. Easy Pineapple Bundt Cake 

The funny thing about Bundt cake is that it looks a little like a pineapple ring. Bundt cakes are easy to make as the hole in the middle ensures a really even bake. You know I like simple recipes, so I make the cake using a store-bought yellow cake mix. Feel free to make a standard sponge if you want to do things ‘properly’. I’ll be sat with my feet up and a blob of whipped cream, loving life.

This is one recipe we got inspiration from amandascookin and we’ll leave the recipe above do the selling. Definitely a recipe worth trying. Her grandma certainly knew how to make a dessert. This light and fluffy pineapple cream cheese treat is one of the top contenders on this list.

Coconut makes a great binder. The long fibers keep everything held together, making them ideal for handheld snacks. Add pineapple and make a fabulous topping for coconut shortbread. The thing I love about coconut is that it browns slightly and turns crispy, giving these bars a little more crunch.

21. Pineapple Delight 

Ok, this isn’t the dessert for you if you are watching your waistline. And it is impossible to resist. This is a cross between a cheesecake and a creamy dessert. It borrows elements from both. There’s a thick layer of buttery graham crackers, with a custard and pineapple cream topping. It’s lighter than it looks and super sweet!

Don’t let the term ‘salad’ fool you. This is about as tooth-achingly sweet as it gets. Combine citrus fruit with chunks of pineapple and finish with a lashing of thick cream and marshmallows. Does it sound simple? Good because it will take you all of five minutes to ‘whip’ up… literally.

I always find carrot cake a bit of an enigma. How does a crunchy woody vegetable transform into something so sweet and juicy? I know that this makes a wonderful pairing when you incorporate chunks of crushed pineapple. You get two things, the amazing pineapple flavor and the juice, which helps keep your cake moist. As with our pineapple cheesecake suggestion, tangy cream cheese seems to work so well with the pineapple.

Let us finish simple. With wonderful ingredients like pineapple, sometimes you’ve just got to let them shine in their own right—pineapple chunks, juicy melon, and perhaps some strawberries or grapes. Give a squeeze of tangy lime and perhaps a drop of sugar syrup juice over the top, and that’s a wrap! A pour of heavy cream might not go amiss either.

Ok, so we aren’t going to grill the icecream itself. We aren’t utterly insane. Baked Alaska is so 1980’s. However, what we will grill is the pineapple. Aside from the delicious flavors of the pineapple and the icecream, you also get a really nice hot and cold contrast which is one of our favorite things. You can make fresh ice cream if you like, but I prefer a big bucket from the store.

Sometimes bringing things back to basics is exactly what you need. That’s certainly true when you don’t have time to be creative but know your family will love this dessert all the same. Pineapple by itself can be a delicious dessert but accompanying it with ice cream can challenge any of these amazing treats.

Start by grilling the pineapple, add nuts of your choosing and complement with ice cream.

Conclusion

So, there is my list of 25 Pineapple desserts. Quite an obvious option on our fruits that start with p list. You’ll have noticed a couple of things about all the recipes on my list. First, they all include pineapple! Secondly, they are all really easy to make. Many use store-bought pre-made ingredients to make life easier. I’ve also tried my best to cram as many ‘no bake’ recipes in there as I can think of. When you’re finished the dessert, it will be time to enjoy our pineapple margarita recipe.
