The typical, and very popular, basil pesto is usually made with fresh basil, garlic, pine nuts, olive oil and parmesan cheese. However, this flavorful version utilizes kale as the main ingredient. It’s a delicious alternative I think you will love!
How to make Homemade Kale Pesto:
The first thing you need is a good food processor. However, if you don’t have one you can use a blender, immersion blender or even mortar & pestle to break down all the ingredients. Because this recipe doesn’t have nuts, it will be much easier to break down to a smooth consistency.
Step 1: Combine kale, garlic cloves, Parmesan cheese, olive oil, lemon juice and basil in a food processor.
Step 2: Blend until everything is broken down. Scraping down the sides, as needed.
Step 3: Add a dash of salt & pepper, along with more olive oil if you would like a thinner consistency. Pulse a few times more.
